Recipe: Quiche 101

Quiche is basically the Western take on an egg tart or custard.  Quiches are my go-to lunches when we travel.  I love a flaky crust, filled with eggs and smoked meat and vegetables.


To start off, you can get a frozen pie crust from the supermarket.  If you are feeling adventurous, make your own crust using my recipe.  


Preheat the oven to 375

Prebake your crust first (blind bake), if you want to make sure the crust is fully cooked. Poke a few holes on the crust. Chill the crust for 20-30 minutes.

Layer with parchment paper. Fill the pie with rice, beans or pie weights. Bake for 15-20 minutes

Cool

Meanwhile...make the filling



1-2 cups of filling ingredient (bacon, mushrooms, sauteed onions, spinach, etc)

1 cup shredded cheese (e.g. Swiss, cheddar, gruyere, etc)

3 large eggs

1 cup milk

½ cup heavy cream

1 tsp salt

¼ tsp black pepper



Break the eggs and add heavy cream and then milk.  Add salt and pepper. Whisk to mix


Add the cooked ingredients to the egg mixture


Bake quiche for 45-50 minutes at 350 degrees

If using small pans, bake for 20-25 minutes


Cool for 20 minutes



Ratio: 

For every egg used, you should add enough milk or cream to create a ½ cup
