Recipe: Pie Crust

Do you have a food processor? If you do, use it to make this crust! Not only does it make things easier, the dough comes out perfect!

If you don't have one, no worries.  But make sure you knead the dough and do not leave huge lumps of butter and shortening - the fat should be smaller than the size of peas.

Whatever method you use, I use this crust recipe not just for fruit pies, but for savoury pies like quiche. 


If you are making quiche, blind baking them first will ensure the bottom is cooked through


Ingredients

¾ cups very cold unsalted butter

3 cups all purpose flour

1 tsp salt

1 tbsp sugar

⅓ cup very cold vegetable shortening

About ½ cup ice water


Dice butter and shortening


Mix flour, salt, sugar in food processor with a steel blade


Add butter and shortening


Pulse 12 times, until butter is the size of peas


Pour ice water with the machine running until dough begins to form a ball


Roll into 2 balls


Roll into pans and freeze for 20 minutes while making filling
